Chia Coconut Strawberry Parfait

I absolutely love this recipe!  While doing a candida cleanse, I had chosen to eliminate dairy, gluten, sugar and all tree fruits from my diet.  I started creating desserts to get me through my sweet cravings, and found that the ingredients were incredibly powerful superfoods!  I'm sure I'll go back to cake and ice cream at some point, but after 90 days of a sugar-free, gluten-free, dairy-free diet (among other things), I think I'm going to keep this one.  Amazing for dessert - but also - SO good for breakfast!  Some things are hard to find, so I've included links to buy them on the internet.  

Why?  Well... Let me tell you.

  • Coconut: lowers blood pressure, cholesterol, builds muscle,helps loose fat, provides electrolytes and prevents fatigue 
  • Stevia: zero calories, good for diabetes, blood pressure, weight loss and even reduces the risk of pancreatic cancer
  • Chia Seeds: massive amounts of nutrients, antioxidents, fiber, protein, omega-3s, lowers risk of heart disease and type-2 diabetes, high in calcium (more than dairy)
  • Almonds: Lower LDL Cholesterol, good for the heart, protection against diabetes, helps increase weight loss and decrease weight gain, more energy production, helps prevent gallstones
  • Strawberries: antioxidant, anti-inflammatory, improved cardivascular health and helps regulate blood sugars

1 container of refridgerated Kara Coconut Cream (6.8 oz) (this is the perfect size for one)

8 drops of Sweet Drops Vanilla Creme flavored Liquid Stevia (+ or - for taste)

2 Tablespoons of Black Chia Seeds

2 Tablespoons of Blanced Slivered Almonds

4-6 Sliced Organic Strawberries (also great with blueberries, raspberries, etc.)

  1. Pour entire container of coconut creme into bowl and stir in 8 drops of liquid stevia  
  2. Add two tablespoons of Chia Seeds and stir.  Chia seeds will form a gelatonous coating if you let them sit for about 10 minutes.  I don't have the patience, but if you think far enough in advance, it's worth it!  
  3. Add Strawberries and Almonds and enjoy!
